Its only a couple of days to go until Valentine's Day, and nothing says I love you more than something you have made with love. Today Im going to share with you this super easy chocolate covered strawberry and raspberry recipe from Billabong Retreat's Blog.

My hubby and I spent 3 amazing days there last year..... let me just say if you are looking for a Yoga retreat close to Sydney make sure you check it out. It was 3 days of beautiful yoga, reflection, relaxation and mind blowing food! Yep I said it.... the food was amazing. And we were treated to a cooking class on how to make your own super healthy chocolate......yep all of my dreams had come true!

So today I wanted to share it with you..... Its quick and easy to make and has absolutely no cooking involved. Did I mention its good for you?  

Original billabong Hard chocolate sauce

  • 1/3 cup organic coconut oil
  • 3 tblspoons raw organic cocoa
  • Stevia or maple syrup or a bit of both (3 drops stevia and 2 tablspoons maple syrup)
  • Mix ingredients..add 1 tblspoon of hot water if coconut oil is hard.
  • Add more cocoa or oil to desired consistency.

Dip strawberries in or dried fruits, I also dipped raspberries, a favourite of ours at the moment.

Place on a tray with foil. Put in freezer until hard.

I took these out of the Freezer just as the raspberries were on the verge of freezing...... Yum! But you can make them ahead of time and keep them in the fridge once they have hardened.
